The experiment does show that purified protein can digest E. coli PG sacculi, but lysozyme is a specific enzyme, not a general peptidoglycan digesting activity, and they did not show that it acts in the same manner as lysozyme (N-acetylmuramide glycanhydrolase) cutting the PG between NAM and NAG. It may have that activity, but Fig 4 doesn't test it.
