Figure 5a shows, as was mentioned, the decreasing concentration of peptidoglycan due to peptidoglycan catabolic process. Figure 5b supports this but by showing sugar concentrations proportional to the amount of endolysin added. This is due to the breaking of the peptidoglycan bonds that releases free sugars (which are needed to bond to synthesize the peptidoglycan cell wall). Therefore, the more peptidoglycan that is catabolized, the more sugars that are available and present. An appropriate GO term for 5b might be GO:0046348, amino sugar catalysis.

Your notes aren't necessarily incorrect, but the assay in Figure 5 is cool, and it would help to have some description of how panels 5a and 5b are different. You might find you can use a different GO term for each panel because the assays are different. (I marked your GO term as correct because I think it is good for 5a.)
