This paper isn't showing 3'-5'-exoribonuclease activity. The protein is already well known to have this activity, and this paper is only using prior knowledge- it's not proving anything in that table other than that the rate of deletion changed. You'll need to find a prior paper- hint, look at the papers this one references.

When the anitserum, that inhibits exonuclease activity, was added the exonuclease activity decreased proving the exonuclease activity of the crude lysates. To verify the sbcB gene activity, the gene was mutated, sbcB15 and when mutated the exonuclease activity decreased to show that the sbcB gene is responsible for exonuclease activity. complete
